Although Rip hasn’t matured, his taste buds have and now he appreciates the functionality, texture, and flavors in the vast mushroom world. No mushroom broth on the market has less sodium. It has a dark and beautiful, savory, nutty, umami flavor. It’s also a great stock for making soups like French Onion and Mushroom Barley or as a base for ramen. Try using it to cook wild rice or farro, or as a braising liquid for root vegetables.
